Slow Cooker Potato & Sausage Soup
1 lb ground sausage, browned
30oz frozen, shredded hash browns (or shred your own potatoes if you want)
3-14oz cans of chicken broth (or 5 ¼ cups chicken broth)
1 can cream of chicken soup
1 onion, chopped
Salt & pepper to taste
8oz cream cheese, cubed (not fat-free)
Shredded cheddar cheese & chopped green onions for garnish (optional)
To the slow cooker, add sausage, hash browns, broth, soup, onion, and salt & pepper.
Cook on LOW for 6-8 hours or on HIGH 3-4 hours.
About an hour before serving, add cream cheese, cover and continue cooking. Stir well before serving.
If shredding your own potatoes, add liquid to slow cooker, then shred potatoes into the liquid to keep them from discoloring.
