We live in Michigan. Sometimes it is cold here, and by “sometimes” I really mean “apparently we will never ever enjoy a warm day again, ever!” During the winter of 2013-2014, we were trapped in the house for months because of the snow and ice and polar vortex. Blech! And I was about 19 months pregnant and was too BIG to leave the house.
When these factors collided, there was really only one thing I could do.
I made comfort food.
And this recipe is the comfortiest of them all. It’s great for serving a crowd or as a dish to take to a potluck. It’s also an easy choice to take to a friend or family that has recently had a baby or is recovering from an illness.
It is reminiscent of chicken pot pie, but without the fussy crust and with sour cream. And cheese.
I usually take the time to chop up fresh carrots, but if you are short on time or just hate chopping veggies, just use a frozen bag of mixed vegetables (which is what you see in the pictures) or peas & carrots.
Creamy Chicken with Biscuits
2 large skinless, boneless chicken breasts, chopped into bite sized pieces
1 medium onion, chopped
1 c carrots, chopped
2 T butter
1 T vegetable oil
1 c frozen peas
1 can cream of chicken soup
1 c sour cream
1/4 c milk (we use fat-free)
1 tube refrigerated biscuits
1 c sharp cheddar cheese, divided
salt & pepper to taste
Preheat oven to 350 degrees. Spray 9×13 dish with non-stick cooking spray. Heat butter and oil in large pan over med-high heat. Saute onions and carrots until slightly brown on the edges. While onions and carrots cook, in a large bowl, combine soup, sour cream, milk and 1/4 c cheese. Remove onions and carrots from pan with slotted spoon and add to soup mixture. Add chicken to the pan. Salt & pepper to taste, cook through until slightly browned. Add chicken and frozen peas to soup mixture and stir well. Pour into prepared 9×13 dish. Bake for 20 minutes. Remove dish from oven and place biscuits over the top. Sprinkle with remaining 3/4 c cheese. Return to oven for 20-25 minutes until biscuits are cooked through. Remove from oven and enjoy!
If you use a bag of frozen vegetables, just add it to the soup mixture instead of sauteing with the onion.
